Technical Data

Classification: Nero D’Avola Terre Siciliane Indicazione Geografica Protetta.
Grapes: Nero d’Avola.
Growing area: Western Sicily.
Tipology of terrain: Mainly clavey terrain of medium consistency.
Vinification: The fermentation at controlled temperatures (20/22°) with a maceration on the skins for about 10/15 days , is followed by the spontaneous malolactic fermentation.
Refinement: In first and second passage Allier oak tonneau for 12 months. In bottles for at least 6 months.
Alcohol content: 14 % by vol.
Serving temperature: 16°-18°C.
Preservation: Store bottles horizontally at fresh temperatures and protected from the light.
Colour: Deep ruby red.
Bouquet: Preserved in alcohol berries scents with delicate wood notes.
Flavour: Elegant, well-balanced , with a strong personality. Long persistence.
How to drink: We suggest it with braised meat, roasts and wild game. Excellent with aged cheese.
